Job Summary
We are looking for a skilled and enthusiastic Commis 2 – Pan Asian Cuisine to support the kitchen team in preparing high-quality Pan Asian dishes. The candidate will work closely with the Chef de Partie and senior chefs to ensure smooth kitchen operations, consistent food quality and timely service.
Key Responsibilities
Assist the Chef de Partie in the preparation and cooking of Pan Asian dishes.
Handle daily mise-en-place, including cutting, chopping, slicing, marinating and portioning.
Prepare and maintain sauces, marinades, stocks, dressings and other Asian ingredients.
Assist in preparing dishes from Chinese, Thai, Japanese, Korean and other Pan Asian cuisines.
Operate basic kitchen equipment and follow appropriate cooking techniques.
Ensure dishes are prepared according to standard recipes and presentation guidelines.
Maintain consistency in taste, quality, portion size and presentation.
Support the team during à la carte and high-volume service.
Monitor ingredient availability and inform the Chef de Partie about shortages.
Follow FIFO and ensure proper storage and labelling of food items.
Minimize food wastage and use ingredients efficiently.
Maintain cleanliness and hygiene of the workstation, equipment and kitchen area.
Follow food safety, hygiene and FSSAI standards.
Assist in receiving, checking and storing kitchen ingredients when required.
Support and guide Commis 3 team members whenever required.
Maintain discipline and follow all kitchen SOPs and safety procedures.
Required Skills & Qualifications
2–3 years of kitchen experience, preferably in Pan Asian/Asian cuisine.
Good understanding of Pan Asian ingredients, sauces and cooking techniques.
Good knife-handling and basic food preparation skills.
Knowledge of wok cooking, stir-frying, steaming, frying and other Asian cooking methods.
Good understanding of food hygiene and safe food handling.
Ability to work effectively in a fast-paced fine-dining environment.
Good teamwork and communication skills.
Strong willingness to learn and develop culinary skills.
Culinary diploma or hotel-management qualification will be an added advantage.
