Job Summary

The Store Keeper is responsible for managing the restaurant's inventory, receiving and storing food, beverages, packaging materials, cleaning supplies, and other operational items. The role ensures proper stock availability, accurate records, quality control, and timely issuance of materials to various departments.

Key Responsibilities

Receive all incoming food, beverage, packaging, and non-food materials.

Check quantity, quality, specifications, expiry dates, and condition of items against purchase orders/invoices.

Maintain accurate stock records for all store items.

Properly store materials according to food safety, hygiene, and storage requirements.

Follow FIFO/FEFO methods to minimize wastage and expiry.

Issue materials to the kitchen, bar, housekeeping, and other departments against authorized requisitions.

Conduct daily/weekly/monthly physical stock counts and reconcile discrepancies.

Monitor minimum and maximum stock levels and inform the concerned manager about replenishment requirements.

Maintain proper records of inward and outward stock movement.

Check expiry dates regularly and report slow-moving, damaged, or expired items.

Ensure the store is clean, organized, secure, and pest-free.

Coordinate with the Purchase Department and suppliers regarding deliveries and shortages.

Prepare stock reports, consumption reports, and variance reports as required.

Maintain proper documentation of invoices, delivery challans, requisitions, and stock registers.

Ensure no unauthorized person has access to the store.

Support monthly stock audits and provide necessary information to management.

Follow company policies, food safety standards, and health & safety procedures.

Required Skills & Qualifications

Minimum 12th pass; diploma/certificate in stores, inventory, or hospitality is an advantage.

1–3 years of experience as a Store Keeper, Inventory Executive, or similar role, preferably in a restaurant/hospitality environment.

Basic knowledge of inventory management and stock control.

Knowledge of FIFO/FEFO and food storage practices.

Basic knowledge of MS Excel and inventory/store management software.

Good numerical and record-keeping skills.

Good communication and coordination skills.

Ability to identify shortages, damages, expiry, and stock variances.

Honest, responsible, organized, and detail-oriented.

Key Performance Indicators (KPIs)

Stock accuracy and variance control.

Minimum stock-out situations.

Reduction in wastage and expired stock.

Timely receiving and issuing of materials.

Proper documentation and inventory records.

Store cleanliness, organization, and compliance.

Successful completion of physical stock audits.
