About this job

We are looking for an experienced and passionate South Indian Chef de Partie (CDP) to manage the South Indian section of our kitchen. The successful candidate will be responsible for preparing authentic South Indian dishes, maintaining food quality and hygiene standards, and supporting the kitchen team during daily operations.

Key Responsibilities

  • Prepare authentic South Indian dishes such as dosa, idli, vada, sambar, rasam, biryani, appam, uttapam, and regional curries.
  • Manage the assigned South Indian kitchen section efficiently.
  • Prepare ingredients, marinades, masalas, chutneys, batters, and gravies.
  • Ensure consistency in taste, presentation, portion size, and quality.
  • Monitor stock levels and inform the Sous Chef of shortages or requirements.
  • Maintain proper food storage, labeling, and rotation procedures.
  • Follow food safety, hygiene, and sanitation standards.
  • Supervise Commis Chefs and kitchen assistants in the assigned section.
  • Coordinate with other kitchen sections to ensure smooth service.
  • Minimize food wastage and control portion costs.
  • Assist in menu planning, recipe standardization, and new dish development.
  • Maintain cleanliness of workstations, equipment, and kitchen areas.
  • Support the Head Chef and Sous Chef with daily kitchen operations.

Requirements

  • Minimum 2–5 years of experience in South Indian cuisine, preferably in a hotel, restaurant, or catering operation.
  • Good knowledge of traditional South Indian cooking techniques and ingredients.
  • Experience in bulk food preparation and à la carte service.
  • Ability to work under pressure in a fast-paced kitchen.
  • Knowledge of food safety and kitchen hygiene practices.
  • Good teamwork, communication, and leadership skills.
  • Culinary qualification or relevant professional training is preferred.
