Key Duties and Responsibilitie Guest Experience & Floor Management

Hospitality Leadership: Embody the warmth of Italian dining; greet regular guests, manage VIP reservations, and actively handle tableside inquiries or complaints with grace.

Wine & Beverage Service: Collaborate with the Sommelier or Beverage Manager to oversee our wine program. Confidently recommend or train staff on classic Italian wine regions (e.g., Chianti, Barolo, Pinot Grigio) and aperitivo culture.

Service Pacing: Supervise the floor during busy lunch and dinner shifts to ensure optimal table turnover and seamless, unhurried pacing between courses (Antipasti to Dolce).

Team Training & Leadership

Staff Upselling Programs: Train, mentor, and motivate waitstaff on menu storytelling—explaining regional Italian ingredients, daily pasta specials, and traditional preparation techniques to maximize average check sizes.

Scheduling & Labour
Create weekly staff rosters balanced against historic sales data, seasonal rushes, and budget limits.

Compliance & Culture: Enforce strict grooming standards, service etiquettes, and compliance with local health, safety, and alcohol licensing regulations.

Financials & Inventory Administration

P&L Responsibility: Monitor daily, weekly, and monthly sales targets. Identify areas to minimize food/beverage wastage and optimize front-of-house operational costs.

Stock & Vendor Liaison: Oversee inventory levels for bar items, specialized Italian glassware, and front-of-house supplies. Coordinate with kitchen teams regarding imported specialty items (e.g., cheeses, cured meats).

POS & Reporting: Manage cash drawers, close daily POS reports, and provide data-driven feedback to ownership regarding menu performance and customer trends.

Job Requirements & Qualifications

Experience: 3 to 5 years of experience as a Restaurant Manager or Assistant Manager in a premium casual, fine dining, or standalone authentic Italian restaurant.

Culinary Knowledge: Strong familiarity with Italian menu terminology, regional dishes, cheese/charcuterie profiles, and basic Italian wine pairings.

Technical Skills: Proficiency with modern restaurant POS software (e.g., Petpooja, POSist, Toast), reservation platforms (e.g., EazyDiner, OpenTable), and basic MS Excel for budgeting.

Communication: Exceptional verbal communication and interpersonal skills. A basic understanding of conversational Italian phrases is a major advantage but not mandatory.
