Commis Chef

• Mise en Place \& Prep: Wash, peel, chop, slice, and weigh vegetables, meats, fish, and other ingredients according to standardized recipes. \[1, 2, 3, 4]
• Station Support: Set up, maintain, and break down assigned kitchen sections (e.g., hot range, cold pantry/garde-manger, butchery, or bakery) for breakfast, lunch, dinner, or banquets. \[1, 2]
• Cooking Assistance: Assist senior line cooks and chefs in assembling and cooking dishes during service hours. \[1, 2, 3]
• Stock \& Inventory Control: Help receive, check, and properly store food deliveries using the FIFO (First In, First Out) method, label and date containers, and report shortages to the Chef de Partie. \[1, 2, 3]
• Hygiene \& Safety: Maintain strict personal hygiene, clean workstations regularly, monitor refrigerator/freezer temperatures, and adhere to HACCP (Hazard Analysis Critical Control Point) and local food safety regulations.
