CDP - TANDOOR & INDIAN (KARUVATTA, ALAPPUZHA)

• Manage the daily operations of the tandoor section and ensure readiness before service.
• Prepare and cook a variety of tandoori dishes, including chicken tikka, tandoori chicken, kebabs, paneer tikka, seekh kebabs, and other restaurant specialities.
• Prepare and bake Indian breads such as naan, butter naan, garlic naan, tandoori roti, kulcha, and other items as per the menu.
• Prepare marinades, spice mixes, yoghurt-based preparations, and accompaniments according to standard recipes.
• Maintain the correct temperature of the tandoor and ensure proper cooking, texture, flavour, and colour.
• Ensure meats, seafood, vegetables, and vegetarian items are handled and cooked according to approved food safety procedures.
• Monitor cooking times and portion sizes to maintain consistent quality.
• Ensure efficient use of fuel and safe operation of tandoor equipment.
• Clean and maintain the tandoor and surrounding work area according to approved procedures.
• Prepare a variety of Indian dishes, including North Indian curries, gravies, dals, vegetable preparations, paneer dishes, chicken curries, mutton dishes, and other menu items as assigned.
• Prepare base gravies, stocks, spice blends, sauces, marinades, and other mise en place required for service.
• Follow standard recipes to maintain consistency in taste, texture, aroma, colour, and presentation.
• Ensure correct seasoning, cooking methods, and finishing techniques.
• Prepare vegetarian and non-vegetarian dishes separately in accordance with food safety and cross-contamination prevention procedures.
• Assist the Head Chef in developing new dishes, specials, and menu improvements when required.
• Ensure all preparations are completed within the required time and in sufficient quantities for service.

Pay

₹30,000.00 - ₹35,000.00 per hour
